Cream of Potato Soup

Makes approximately 8 cups


2 sticks of butter
1/4 cup chicken base
1 1/2 tsp. pepper
6 medium potatoes, peeled and cut into bite-sized pieces
7 cups heavy whipping cream
1/4 cup dried parsley

Cooking Instructions:

In a large stockpot, melt butter. Add chicken base and pepper to butter. Whisk to combine. Stir in potatoes. Slowly pour cream over mixture and stir to combine. Sprinkle parsley over soup and stir to combine. Simmer for 45 minutes or until soup reaches 160 degrees Fahrenheit and potatoes are cooked through, stirring occasionally. Enjoy!
